Chef's Quick Tip: Lemon Cheesecake

News 12's Tina Redwine is joined by Chef Kamal from Harlan Publick in Norwalk to whip up a delicious dessert.
Ingredients:
1 cup cream cheese (softened)
1 cup mascarpone cheese (softened)
1 cup sour cream (room temperature)
1 cup sugar
1 tsp vanilla extract
Pinch of salt
Zest of 1 lemon
Juice of 1 lemon
Instructions:
Place all ingredients into a mixing bowl, whisk until combined, then strain.
Fill greased 4-oz ramekins ¾ of the way with batter, place into a large baking dish; pour water into baking dish to reach half way up ramekins; then bake at 325 degrees for 45 minutes.
Let cool, then remove from ramekins.
Ingredients:
4 tbsp raspberry preserves
1 cup black berries
½ cup strawberries
1 cinnamon stick
1 pc star anise
½ vanilla bean
Instructions:
In a small stock pot, toast cinnamon and star anise over medium heat, 2-3 mins.
Add remaining ingredients, let simmer for 10 mins, then chill.
