What’s Cooking: Fiesta fruit cup

Ingredients:
1 lb. Watermelon
½ lb. Jicama Chunks
1 lb. Mango
2 ea. Kiwi
2 ea. limes
2 tbs. tajin
Instructions:
1. Remove the outer layer and cut the mango, watermelon and jicama into bite size pieces and place it in a bowl.
2. Remove the outer layer of the kiwi, slice into rounds and place in the bowl with the other fruit.
3. Add the juice of one lime and 1 tbs. tajin.
4. Toss until all are incorporated.
5. Using a margarita glass, garnish the rim with tajin by wetting the rim with lime juice and sprinkling with tajin.
6. Fill each cup with the fruit mixture and garnish with a slice of lime and a sprinkle of tajin.
