Chef Giovanni Farruggio, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make chicken zucchini salad.
Ingredients:
1 lb zucchini noodles
1 breast of grilled chicken, thinly sliced
¼ cup shredded carrots
1 bulb garlic sliced thin
1 cup EVOO
1 cup cherry tomatoes
Directions:
Heat a ½ cup of EVOO in a sauté pan. While oil is getting hot cut the tomatoes in half and set aside. Once oil is hot, add all the sliced garlic and cook until golden brown. Add the chicken.
Add shredded carrots and cherry tomatoes and cook for two minutes. Add the zucchini noodles and shut the flame.
Add the rest of the oil and toss together until all is fully incorporated. Plate and serve.
