Some News 12 reporters are working from home - balancing their families and work-life - which are now colliding. Others are adjusting to new procedures or work spaces as they practice social distancing.
Here are just some of their vlog posts from March and April - sharing with you their 'new normal.'
Wednesday, April 15 - Need some unique cooking tips? News 12 digital reporter Prashanthi Musapet breaks down one of her favorite vegan snacks - avocado toast (Check out the recipe below!)

Recipe for Vegan Protein Avocado Toast:
Ingredients:
-Slice of sprouted bread (6 grams of protein)
-Vegan butter or coconut oil 
-1/2 ripe avocado
-Sprinkle of Pink Himalayan Salt
-Everything Bagel Seasoning (to taste)
-4 to 5 strips of prepared Tempeh Bacon (12 - 16 grams of protein)
Prepration:
-Use low heat on the stove to begin warming up the skillet.  While the skillet begins to heat up, spread a little bit of vegan butter or oil on either side of the bread.  Raise the temperature on the stove to medium heat.
-Place the bread on the skillet and allow both sides of the bread to get a nice shade of brown before removing.  Next add the strips of Tempeh Bacon.  Allow them to cook for at least 3-4 minutes, before flipping.  Once the Tempeh is cooked, set aside and allow it to cool.  Scoop the avocado out of its shell with a spoon and use a fork to smash and spread it onto the bread.  Sprinkle on the salt, then add the bagel seasoning.  Top with Tempeh Bacon strips.  Voila!
