A Nassau County family baked their way to success, opening Uncle Joey's Rainbow Explosion bakery in Farmingdale. The bakery specializes in the beloved rainbow cookie dessert. They created recipes to incorporate the rainbow cookie in almost every product they sell.

"We started with a regular rainbow cookie, and it exploded into all the other items we make now," said co-owner Joseph Veneroni. Baking was always a passion for Joseph while growing up. "My brother gave me my first job when I was 12 years old; he owned bakeries across Long Island, and I fell in love with it," said Veneroni. "I decided to put a twist on everything rainbow," he added.

What started in the home kitchen quickly grew into something much bigger. In 2021, Joseph and his wife Jennifer opened Uncle Joey's Rainbow Explosion on Main Street in Farmingdale with their two boys, Anthony and Joe. The business is all about tradition, family, and rainbow cookies.

With over 26,000 Instagram followers, the family has built a social media following. They collaborate with other local businesses and influencers. They say people from Long Island and the tri-state area travel to try their rainbow cookies.
