Chefs from Don Coqui in City Island say they have created a healthier alternative to summertime meals, including a chicken salad with avocado aïoli sandwich and a healthy salad with salmon.
 
Chicken Salad with Avocado Aioli Sandwich
For the Aioli you need:
Half an avocado
Half a lime
A drizzle of honey
A handful of chopped cilantro
Salt and pepper to taste
Add ingredients to blender. Blend until smooth.
To make the sandwich:
Take chicken that has been cooked and cut into cubes ahead of time, and mix it with the avocado aioli.
Place fresh watercress, tomatoes and the chicken salad mix on bread.
Enjoy!
 
Healthy Salad with Salmon
For the salad you can blanch any type of vegetable you like. After it is cooled, add it to a bed of arugula.
Salt and pepper a fresh salmon fillet, slice it lengthwise and then grill it two minutes on each side.
Add the cooked salmon to the salad, drizzle with olive oil.
Enjoy!
