Chef Giovanni, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Spinach and Carrot Cakes.
INGREDIENTS:
2 cups spinach (wilted)
1 cup carrots (shredded)
½ cup shallots (minced)
1 cup seasoned ricotta
1 cup mascarpone
2 cups pecorino
2 eggs
2 cups panko breadcrumbs
1 tbs. salt
1tsp black pepper
DIRECTIONS:
1. Place all ingredients into a bowl and mix well until all are incorporated.
2. Divide the mixture evenly to make twelve even patties.
3. Place all the patties on a papered sheet tray and bake at 350 degrees for 25 minutes or until a golden brown color is achieved.
