What's Cooking: Uncle Giuseppe's Marketplace's Tripe Fra Diavolo

Chef Giovanni Farruggio, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Tripe Fra Diavolo.


· 5 lbs. Honeycomb Tripe (sliced)
· 1 tbs. Garlic (chopped)
· 2 tbs. Olive oil
· 1 tbs. Cherry Peppers (finely chopped)
· 3 tbs. Salt
· 1 tbs. Basil (rough chop)
· 1 qt. Marinara


1. Fill a medium-sized sauce pot with water, add 2 tbs. of salt and bring to a boil.
2. Once water is boiling add the cut tripe and cook for one hour.
3. Strain the tripe, cool, and set aside.
4. In a sauté pan heat oil, add the garlic and sauté for one minute.
5. Add the chopped cherry peppers and sauté for another minute.
6. Add the tripe to the pan and mix to ensure all flavors are incorporated.
7. Add the marinara, 1 tbs of salt and let simmer for twenty minutes.
8. Remove from heat and add the basil and mix until all the flavors are incorporated.
