Chef Giovanni, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make grilled Italian skirt steak.
Ingredients:
1 ½ lb. skirt steak (or one skirt steak)
1 tbs. garlic (minced)
1 tbs. parsley (chopped)
1 lemon (juiced)
¼ cup olive oil
1 tsp. salt
½ tsp. salt
DIRECTIONS:
1. In a bowl prepare the marinade by adding all ingredients and mix well making sure that all ingredients are fully incorporated.
2. Place the skirt steak in the marinade and massage the steak making sure that it is fully coated.
3. Shake the excess marinade off the meat and place on a hot grill.
4. Cook for approximately 2-3 minutes per side or until an internal temperature of 135 degrees is achieved.
5. Remove the steak from the grill and let it rest for five minutes.
6. Take the long ribbon of skirt steak and first cut it into manageable 4- to 6-inch pieces. This means dividing the skirt steak into three or four equal rectangular pieces.
7. Slice the individual rectangular pieces on a bias (at a diagonal) perpendicular to the grain (against the grain) for maximum tenderness.
